Birthday Cake Cookies

Just Add:

  • Homemade ish cookie mix
  • 1 egg
  • 1/2 a cup of butter
  • 1/2 a cup of white chocolate chips
  • 1/3 a cup of sprinkles

For the meringue:

  • 2 large egg whites
  • 1/2 granulated sugar
  • 1/4 tsp cream of tartar
  • 1/2 tsp vanilla extract

Directions:

1. Preheat oven to 350°F (176°C).

2. Add dry cookie mix + brown sugar packet and mix.

3. Melt butter in the microwave (heat 15 secs, stir and repeat until melted).

4. Mix in wet ingredients (egg & melted butter; make sure butter is warm but not hot) using a fork or spatula.

5. Add chocolate chips to the dough + the sprinkles.

6. Scoop the dough into balls (1 tablespoon each).

7. Place the balls 2 inches apart on a baking sheet.

8. Bake for about 8 minutes (ish) - the cookies should still be soft in the center.

Once cooled a bit, add meringue or skip and use our glitter packet to add a little sparkle to your baked goods.

Instructions for the meringue:

1. Combine egg whites, sugar, and cream of tartar in a heatproof bowl (like glass or metal).

2. Place the bowl over a pot of simmering water (double boiler style). Whisk constantly until the sugar is dissolved and the mixture feels warm to the touch (about 160°F / 70°C).

3. Remove from heat and beat with a hand mixer or stand mixer on high speed until stiff, glossy peaks form (5–7 minutes).

4. Beat in vanilla, if using.

5. Use immediately to pipe or spoon onto cookies.
